Power Food: Broccoli

This week the power food we want to talk about is one that we LOVE and you can make in so many different ways, broccoli! Yum!

Steph: So I have to admit I’m a big fan of eating my veggies raw. When I don’t eat my broccoli raw I tend to steam them. I’ll usually just do that but if I’m having someone over or am feeling like jazzing it up I’ll do this:

Bite size pieces of Broccoli (use as much as you want.. Ideally a full head of broccoli
⅓ cup butter
1 Tbsp brown sugar
3 Tbsp soy sauce
2 tsp white vinegar
2 cloves garlic - minced
¼ tsp ground black pepper
⅓ cup salted chopped cashews.

This will feed about 4 and possibly leave some leftovers.

1. Steam the broccoli.
2. Melt butter in a small skillet over med heat. Add Brown sugar, soy sauce, vinegar, pepper and garlic - boil.
3. Remove from heat and mix in cashews
4. Slowly pour the sauce over the broccoli (only use enough to coat the broccoli.. you don’t want it to be drenched)
5. ENJOY and serve immediately.

This is soooo good!! I love the recipe.

Jenn: I have to say I love broccoli prepared all different ways! Lately I have enjoyed making roasted broccoli, it takes about 5 minutes to prep and 15-20 minutes to bake in the oven. I absolutely love this new recipe I recently tried, and it’s really easy.

All you’ll need is, olive oil, lemon, salt, pepper and cheese.

Here are the steps:

  • Start preheating your oven to 425 degrees fahrenheit.
  • Chop up bite sized broccoli pieces.
  • Then mix your desired amount of oil, salt, pepper, and lemon in a bowl with the broccoli.
  • Place broccoli on a baking sheet and put in the oven for approximately 15-20 minutes.
  • Remove from oven and serve with your favourite cheese shredded on top.
