Power Food: Cabbage

This week is my week to choose a power food, cabbage was my choice because when I was searching online for different homemade soups I came across this cabbage soup recipe and it’s 0 ww points! I also really like the taste of cooked cabbage.

3 cups non fat beef broth
2 garlic cloves, minced
1 tablespoon tomato paste
2 cups chopped cabbage
1/2 yellow onion
1/2 cup chopped carrot
1/2 cup green beans
1/2 cup chopped celery
1/2 cup chopped zucchini
1/2 teaspoon basil
1/2 teaspoon oregano
salt & pepper to taste
1. Spray pot with a nonfat cooking spray.
2. Saute the onion, celery, carrots and garlic for about 5 minutes.
3. Add broth, tomato paste, cabbage, green beans, oregano, basil, salt and pepper to taste.
4. Let simmer for about 10 minutes, or until vegetables are tender.
5. Enjoy
This recipe can be easily customized, adding potatoes, other vegetables, spices or ingredients. Just always remember to account for points when adding other ingredients that are not zero points.

Nutrition facts:
Did you know that cabbage has more vitamin c than oranges? I was shocked to learn this interesting fact! Cabbage is also very rich in fiber, helping to increase regularity. This veggie is also really great at detoxifying. Overall just a great thing to add to your diet if you’re not already.

I was never a big fan of cabbage growing up. I’d actually usually eat it raw and enjoyed that! Otherwise I’d eat it in coleslaws or in salads. My ota used to make sauerkraut back in the day which brings back good memories :).
It’s not something I have ever cooked with but my mom used sometimes in casseroles, soups, and cabbage rolls. One dish I actually dreaded growing up (sorry mom) is one dish I actually love today! My mom’s cabbage casserole. It is sooooo good!! It’s also filling, healthy and can go a long way. I like to have a side of sour cream (mmmm) to dip it in but you can eat it plain or also add ketchup. Hot sauce would be good too.. I’m getting all of these ideas!!! hahah
Anyways here is the recipe and let me tell you.. it is EASY.. and low in points! 4 pointsplus+ per serving! Yum!
Cabbage Casserole
1/2 head of cabbage, chopped
1 lb lean (or extra lean) ground beef
1 tin cream of mushroom soup
1 tin tomato soup
1 tin water
3/4 cup rice
Salt to flavour

1. Preheat oven to 350F
2. Brown ground beef and drain fat
3. Add soups, water and rice. Flavour with salt (you want this to be creamy)
4. Put chopped cabbage into a roasting pan and spread it out evenly
5. Place the meat mixture on top and bake for 1.5 hours
6. Enjoy!

Ladybug Nail Tutorial

Spring is here so it's the perfect time for me to try doing ladybug nails, and sharing with all of you how I did it. This nail design was very simple to do, and I really like how they turned out.

Things you'll need: Black, red, and white nail polish. Base and top coat. Tooth picks, or dotting tool. Thin nail art brush. Piece of paper. (If you don't have a dotting tool or nail art brushes, just take your time with a tooth pick and you'll be able to get a similar effect. Try cutting the tooth pick in half for larger dots.)

Nail polish used in this tutorial: Finger Paints: Primary Color - O.P.I: Alpine Snow - Essence: #21

Step 1: Use your favourite base coat to protect your nails, and create a surface for the nail polish to stick to.

Step 2: Do 1 or 2 coats of your favourite shade of red polish, and let dry before carrying on to the next step.

Step 3:  Dot the black polish on a piece of paper and use a very thin brush (or tip of a tooth pick) and take your time making a black line as thin as possible down the center of your nail. Now make two curved lines on either side of the middle line, it will look like this.

Step 4: Now fill in the lines on the end of your nail to make the head of the lady bug. Please refer to this video for demonstration.

Step 5: Put a dot of black polish on a piece of paper and use a dotting tool or tooth pick to make little dots, please refer to the video for demonstration.

Step 6: Put a dot of white polish on a piece of paper and using a dotting tool or tooth pick like the above step, put two little eyes.

Step 7: Use your favourite top coat to seal this cute little design.

Got a crush?

If I would have looked into my future three years ago I never would have thought that I’d be the one telling others to step outside of their comfort zone. I had personally never done it myself! As you’ve noticed a lot has changed in my life and I am not afraid anymore.

I met my current boyfriend in August of 2010. We were friends for a year before we started dating and we talked 5/7 days a week (we worked together). When I first met him we had a similar relationship that I had with a lot of coworkers.. friendly but not close. Until a few months in, I started realizing that this guy was really something and I honestly felt like he was the male version of me. It actually freaked me out how similar we were. In November 2010 I left a 4.5 year relationship and took a lot of time to heal. During this time my feelings for Pete (my current boyfriend) grew and I knew I was falling for him. He decided to switch jobs that summer and I was devastated. I was scared I’d never see him again and that we’d lose touch. He started coming on facebook chat every single night after that so we could talk :). It makes me smile even now just thinking about it. I knew this was a sign. I also knew that “work” no longer stood in the way and it wouldn’t be an awkward situation if things went badly.

A week or two later, after talking every single day I finally decided to say “Screw it! What do I have to lose?”. I told him I had feelings for him. He was shocked of course but I gave him some space so he could soak it in. A few weeks later we made it official and now here we are over a year and a half later happy as can be talking about spending our lives together and the things we see in our future.

To think this never would have happened if I hadn’t stepped outside of my comfort zone and did something about my feelings. To think that if I had not made the first effort and pushed for it, I would not be with someone who I feel is my soulmate. Someone who see’s 100% of me and I can be myself with completely. So much so that he laughs at me often and says “babe you’re a weirdo”. I love that!

Why do so many women nowadays still act like this is a man’s game? That the man needs to take all the first steps and that he needs to make all the effort? It isn’t. If you want something you need to go out and get it! Stop sitting back and crying wondering “why won’t he talk to me?” or thinking “I’ll never know if he likes me”. You can know! It just takes a little effort and sneaking outside of your comfort zone.

If something passes you by it is your own fault because you let it. Go get what you want. Tell people how you feel. Stand up for yourself. Go against your grain and try something new. It is up to you to create your life.

Week in Review

Steph: This week was meh. I didn’t try as hard and it bit me in the ass.

That is the past and this week is fresh. I have a plan.. to plan! I am going to plan ahead every single day. Everytime I think about eating something I will calculate it before and ask myself “Is this worth it?” I am also going to try and be more active and will definitely get out more often to power walk as the weather is starting to get BEAUTIFUL! Spring is finally here :).

Jenn: This week was much better than last week, I was more careful with what I ate and made much healthier options. I am feeling way less bloated as a result. Yay!

Brandin and I went on a movie date on Saturday to see Evil Dead, I really enjoyed it and recommend it to any horror movie fans.

Noah got his first real cold this week. I am very sleep deprived, it's such a helpless feeling when your baby is sick. The doctor prescribed amoxicillin, he is improving which is a major relief, it is so sad seeing him sick. I guess it's just one of those things that are unavoidable. I am definitely fighting a cold now too, so lots of cold fx, tea, vitamin c and water for me! Hopefully I can make it go away before it gets any worse.

This week I'm going to do the same as Steph and preplan my meals. I find myself going over my points allowance sometimes because I'm simply not pre planning.

Smart Ones Review: Teriyaki Chicken & Vegetables

So I tried this meal last week for the first time and I have to admit I was very pleasantly surprised! It is amazing!! I usually don’t like these kinds of meals but I wanted to give it a try so I could share with you guys.. here it is!:

Taste: 4/5 Not a big fan of teriyaki but I wanted to try something different. It is really tasty! The veggies even tasted nice and fresh and weren’t your usual vegetables that get thrown into almost every frozen meal. So good!

Points value, was it worth it?: 5/5 For SURE! It was tasty and really did fill me up! I’d eat this again for 6 pts.

Expectation vs Reality?: 5/5! It looked just like the box! Unfortunately I couldn’t wait to start eating so I ate about 1/4 of it before this pic. Oooops!

I was SHOCKED that the finished product actually looked like the box. This NEVER happens! I highly recommend you pick this up and give it a try.

Overall: 4.5/5

I Don't Care..

I don’t care that my thighs touch or that they jiggle.. because this used to be my least favourite part on my body and now I love my thighs.

I don’t care that I’m larger than the average woman.. because I used to be a lot bigger and I love the person I’ve become.

I don’t care that I don’t have perfect tank top arms.. because three years ago I couldn’t wear a tank top without feeling self conscious about my muffin top and covering myself up with a hoodie.

I don’t care that I’m not most guys ideal woman.. because I am one man’s ideal woman and he is all that matters.

I don’t care that I have a chipped front tooth.. because I brighten people’s day just by flashing my lovely smile.

I don’t care that a lot of people think I’m weird.. because I love being different... who wants to be the norm?!

I don’t care about these things because I love myself and my opinion is the only one that matters. The things I can change I’m working on. The things I can’t change I have accepted. Why live in doubt and negativity when it is so unnecessary? Life can be spent in so many better ways other than worrying about the negative things.

No definition of beauty or love matters except your own. Don’t ever let anyone make you think you need to redefine that.

All together now.. “I love myself and I AM beautiful”. You just spoke the truth.

Not living in the past

I recently discovered over the last 2 years or so that I really need to stop living in the past. I used to constantly look back and compare. I would constantly talk about all of the bad things that have happened to me and it made it very hard to move on. I’ve been through some extremely hard experiences in my life and it’s been a tough ride. Most of these things lead back to either being bullied growing up, being ridiculously shy and reserved or my absolutely disastrous dating past.  I’ve been cheated on, threatened physically by my boyfriends, emotionally abused.. the list goes on (and on). I never knew what it felt like to be appreciated until now.

Years ago I was always trying to build on something that was never fully stable or strong. It always crumbled and fell apart. Nothing good was happening for me. I decided to start from scratch. I decided to start with a clean plate, build on myself and start painting on this beautiful canvas they call life. I started spending more time thinking about what I wanted and about the path I wanted to take in life. I started becoming more open and voicing my thoughts. I started to realize that I wasn’t a bad person and there was a lot of good in me. I used my past experiences to build on my future and go in a completely different direction. I changed for the better. I kept busy, surrounded myself with good, strong, amazing people and pushed myself outside of my comfort zone. I also decided to have a total lifestyle change. I joined weight watchers and MAJORLY cut back on drinking.

Over the course of the last few years I evolved into this person who is no longer hurt, bitter or in pain. I radiate happiness. I smile at strangers, do random acts of kindness and appreciate things I never would have. This is because I have moved on. I moved on from the past and the person I was back then. I used the bad experiences and the negative thoughts to make new, exciting experiences and create positive thoughts. I knew that I never wanted to be that person and turning back was never, ever an option. I realized that stepping outside of your comfort zone doesn’t need to be terrifying and that it can be quite liberating and exciting. I’ve learned so much and have grown an incredible amount since I made these changes. I created a new life and a new me. I love this life.

Constantly looking back on the negative aspects and living in the past is not healthy. Life doesn’t just go the way you want it by sitting back and doing nothing. Step outside of your comfort zone and make your life happen.

Week in Review

Steph: This week started off poorly but ended well :). I wasn’t that good earlier but got right back on track and feel good. I also increased the amount of exercise I got this week and worked out 4 times. I like that number! lol 0 to 4 is a pretty big difference.

I ended up gaining 1 lb this week which I am not going to stress over. I could have gained 1 lb of muscle.. I have been working out a lot more this week than I have in the last few weeks. Plus my legs are feeling hard again!! I love that feeling. Leg muscle is my favourite. Anyways. I am going to continue working out this week. I’ve got an extremely busy week but want to head to zumba at least once and will try to get at least one workout in at home.

Jenn: I haven't been doing well with following a plan this week. I was not making the best food decisions, and I feel really yucky because of that. I'm embarrassed to admit these things, but when I started this blog I promised myself I would be accountable for my actions.

Brandin and I celebrated our 9 years together, and went to one of our favorite restaurants Red Lobster. It's was so nice!

Yesterday I left the plug in the laundry basin, thinking nothing of it because the plug wasn't near the drain. Well it moved and the basin overflowed and got the floor really wet. It also was overflowing onto my scale. Surprise, surprise, it's not working. I will be buying one today when I'm out. I like to weigh daily, it really helps me stay motivated. I know some people don't agree with weighing daily because weight fluctuates, but it works for me.

This week WILL be a new week, enough of falling into old habits. This is a journey I'm taking and I will beat this.

Recycling Beauty Waste

While watching Breakfast Television on CityTv one morning they featured a special program for recycling beauty waste. Garnier has partnered with TerraCycle to make a cleaner and greener world, I think we should all do our part in keeping our planet clean and I encourage you to check out this beauty brigade. In the past I would toss my old empty or old half used items in the trash, now I have learnt that a lot of the products I was tossing can actually be recycled. I encourage you to please join me in this awesome cause and to share with your other friends, wives, and daughters.

With TerraCycle, all you have to do is collect or start collecting all of your beauty waste in a box. The following types of waste can be collected through the Personal Care and Beauty Brigade: lipstick cases, mascara tubes, eye shadow cases, shampoo bottles, conditioner bottles, bronzer cases, foundation packaging, body wash containers, soap tubes, soap dispensers, lotion dispensers, shaving foam tubes, powder cases, lotion bottles, chapstick tubes, lotion tubes, face soap dispensers, face soap tubes, face lotion bottles, face lotion jars, nail polish bottles, nail polish remover bottles, eyeliner cases, eyeliner pencils, eyeshadow tubes, concealer tubes, concealer sticks, lip liner pencils, hand lotion tubes, hair gel tubes, hair paste jars..etc. Once you’ve collected all your old beauty products go to and sign up. This will enable you to print off a ups label, and send the recyclables free of charge to the facility. Where they take old products and give them a new life. I dont care.. I LOVE IT!

You may or may not have guessed.. but I'm really into this song. Like.. a lot. I frequently yell this out loud when I'm at home or really enjoy something. I'm a bit of a freak.

Anyways I came here to talk about yoga! I've been doing yoga for over 6 months now and .. I LOVE IT! hehe.

I really do think that is has changed things for me. First off.. it's was a different way for me to get my workout in. I went in thinking it would be a lot easier than it had been. First class I left feeling a tad bit discouraged because it was extremely hard and I didn't think I could "do" it. I didn't like my first class. Buuuut of course I didn't quit and I continued and it gradually got easier and quickly got more enjoyable. I am lucky enough to work in an environment that encourages this. We have yoga every thursday at work during the day. It's a great way to split up the workday and it helps me feel relaxed and .. a lot better in general.  I am also lucky enough to have an amazing teacher who is down to earth and really cool. She really makes the classes enjoyable even though I feel like she is pushing us.

I used to be a bit embarresed in the class as a lot of my coworkers are a lot better at yoga than I am but I am not anymore. Of course they're good people and don't judge me for sweating like crazy and not being able to do certain moves (the crow and sideways crow is INSANE.. can't do that one!).  I try to push myself every class by trying to stay balanced for as long as possible and pushing myself in my flexibility. I've really improved! I also find I do not suffer from as many aches and pains. I haven't visited my massage therapist in months!

Yoga is great for you because it improves your strength, flexibility and posture. The deep breathing you do during yoga also helps with your endurance and sports performance. One thing yoga helps me with is relaxing and clearing my mind of  any stress. I seriously feel better and happier after every class! There are many other health benefits of yoga that include health benefits for heart disease, asthma, back pain and arthritis. They also have many studies ongoing studying other health benefits.

We had our first class again at work after two or three weeks on Thursday and I have to admit it was tough getting back into it again. I'm still hurting 2 days later. It's a good pain and I'm excited to do it again on Thursday!

Week in Review

Steph: Hi guys, this week was a good one for me.. I’m completely back on track! I’ve stayed within my points, haven’t eaten past 9pm and have made healthy decisions. It feels really good! I also love waking up in the morning knowing I wasn’t eating late and didn’t have any stomach aches. The one thing I could have improved was my activity.. I was not active at all this week! I was very busy starting up something fresh and new which I will tell you about later on in this month. So exciting!!

Anyways.. I was down 2.6 lbs this week and couldn’t be happier with that change! Next week I am going to incorporate as much activity as I can and get my butt moving in that department!

Jenn: I lost the pound I had gained which is good plus one! I'm back on track and feeling good. I do wish I had more time to exercise. Yesterday my hubby decided on picking up KFC for supper because it was so long since we have had it. I couldn't eat it. I only ate about 1/4 of my meal. I've noticed this is happening to me a lot, since I am eating a lot more fresh and cleaner foods when I do try a greasy meal I'm just not enjoying it and can't eat it. I seriously wonder how I ate this way before.

I want to go back to weighing daily and not eating past 8pm. This really helps me stay motivated and focused! I am feeling a lot of pressure right now to lose weight because the weather is getting nicer and I want to lose more. Time to REALLY get extra focused!

Steph: Jenn and I will be taking the week off and will return in the next week or two with some big changes that are happening here on the blog. Stay tuned!

Pedometer Week One Update

Using the pedometer for one week was very eye opening for me. I guess I move around a lot more than I thought. My average steps per day was 6500-7000! The first few days I wanted to see what my normal day to day steps would be. Then I was going to try and push harder to increase my number. I was not able to meet 10,000 like I planned, due to hurting my foot. For 3-4 days I did not do much walking, I was more hobbling around. Not pleasant. I am happy to say that I am feeling much better and will be pushing really hard to meet my goal.

Did you know:
  • Tracking steps per day originated in Japan for research.
  • Doing 10,000 steps is approximately 8 kilometers of walking.
  • Walking 1.5 kilometers burns approximately 80 calories.
  • Setting aside 20 minutes of walking outdoors per day can significantly improve overall health and improve your mood.

I did have an issue some days while using the pedometer. I would restart it not even realizing I had pressed the restart button. Causing me to have to estimate my number of steps that day. I was checking it regularly so it’s not that big of a deal, but was kind of annoying.

It's all in the pants!

Recently I had a major accomplishment in the pants department. A pair of pants that fit me fairly snug in the waist (in January) are getting to the point where they are almost TOO BIG to wear! See Pic:

This is a pair of pants I purchased last year as my old (“fat”) work pants were wayyy too big. Going down a size is always sooo exciting! These pants always fit me fairly snugly and somewhat varied with my weight fluctuation that occured in 2012. By the time the new year came I had had enough. I was tired of my new pants still feeling a bit tight and wanted to see some change. Boy did I see change!

I was also able to fit into a pair of Tommy Hilfiger pants I hadn’t been able to wear for almost 5 years! It feels so good being able to finally fit COMFORTABLY into pants where you could never even close the zipper!

I’ve also found that my jeans (these are the ones I bought after the “new, smaller sized” jeans became too big) are already getting big on me and after wearing them for 15 minutes or so start to slide down and get saggy in the butt. This is kind of frustrating as I now have no skinny jeans that actually fit me .. but in time I will purchase new pairs! Besides.. we’re almost done with boot season! I’ve decided to convert these pants into shorts for the summer and wear a belt if needed :). At least this way my butt won’t look funny! ha! That’s only IF they’re wearable at that time. Don’t want to look frumpy! hehe  

When I have bad weeks I think about how far I’ve come and how my pants are still loose! I don’t let these negative thoughts get me down anymore.. actually I push them far out of my mind. I can’t wait for my Tommy Hilfiger pants to be too big. That will be a MAJOR accomplishment for me.

I’m going to keep on truckin! You can all come along for the ride :)

March Glossybox Review!

I was eagerly anticipating this box .. as I always do! It arrived on the 27th and I literally squealed with delight when Canada Post dropped it off. The mail carrier (see pete.. I didn’t call him a mail man) actually laughed at me! ha.

I have to admit I squealed even while I was opening it.. but I’ll explain why in a bit ;).

This month glossybox was back to their usual packaging which I liked. I’ve been keeping all of my boxes as they’re so cute to gift things in! :

As I usually do I read the little card that comes with the box and got super excited because I always try really hard not to look what is inside of the box before I read it:

ModelCo Cheek & Lip Tint - Rosy Red-- FULL SIZED!!!

This was the first product I had tried from the box. I’ve never really been into lip tints or stains as I tend to suck at application. Plus, you can’t mess up with this one because you’ll ruin your whole look. I started with applying it to my cheek.. eeeek!! It did NOT work out! I tried it on the other cheek.. it looked good! I think the first time I didn’t put enough.. so.. I tried again! This time I used wayyyy too much and looked like I had a red splotch on my cheek!

I talked to my mom about this product as she also subscribes and she mentioned putting it on your finger tips, patting them together and then applying them after. She likes this stuff.. so I think I will try that.

The stain went on a lot nicer but I’m not sure I love the colour. I’m more of a peach/coral/pink type person.

Not sure I’d ever use this product on a work day or when I’m rushing somewhere. I need a lot of practice on this before I could wear it everyday. I’ll try it again and see :)

Jergens Natural Glow 3 Days to Glow Moisturizer in Fair to Medium-- FULL SIZED!!!

As someone who really, really, really (x 1,000,000) hates tanning (it’s so bad for you!!!).. this will come in handy for me this spring! I REALLY enjoy sitting out in the sun and catching some rays but going to tanning beds is really bad for you! Sooo against that! I’ve used this product before and it’s great! It goes on smoothly, works quickly and does exactly what it says! I’ve never ever had a problem with this product. I’m Going to start using this within the next week :)

L’Oreal Paris Youth Code Dark Spot Corrector Serum-- FULL SIZED!!!

As someone who already faintly suffers from dark spots I was really happy to receive this! This runs in my family so I know it’s a good idea to start soon. I’ve been using it for a week now and my skin feels great! Really soft and smooth! It says that the age/dark spots will not fade until 4 weeks so I will give you an update on this product the next time I do my glossybox review.

Tresemme Platinum Strength Deep Conditioning Treatment -- FULL SIZED!!!

I was really, really excited to receive this as I needed some deep conditioning treatment! I haven’t got a trim since January and I have some serious split ends! I used this ONE TIME and my hair felt FABULOUS. Soooo soft and silky and my ends looked really smooth! I will definitely be buying this in the future!!

Rating: Wish I could give this a 10/5 but that is unfair.. hahah 5/5

BM Beauty Platinum Tiara Eyeshadow

I have to admit I never really liked loose powder eyeshadow but this was a very different experience. I tried it for the first time on Thursday and was pleasantly surprised. It went on nicely and I barely needed to use any! It didn’t get on my cheeks or all over the counter which is what usually happens when I use loose eyeshadow. I do however have to complain about the packaging.. it took me at least 5 minutes just to open it!! I swear it was jammed.. that pissed me off. That all went away when I tried it though. I put it over Sin by Urban Decay and it blended very nicely. I’d welcome this again in another glossybox

So there you have it my peeps, my glossybox review! Overall, I was extremely happy. My glossybox almost totalled $90!

If you havent already caught on the reason I was so excited is because all of the items are full sized items! Whoot! I loved everything I received this month.

Our Week in Review!

Jenn: The start of this week was excellent, and then Easter weekend happened. I feel off routine and ate badly. I had an excellent first Easter with Noah though.
I woke up Monday morning not being able to walk on my right foot, then Tuesday was even worse and got swollen! I went to the doctor and got an x-ray and blood work done. Hopefully it's nothing but a sprain, I have no idea what I could have done for this to happen.
I am going to start fresh and track everything today and the rest of the week. Dresses and shorts weather is only 3 or less months away so I'm going to push extra hard to eat right and get rid of this nasty feeling I have. I owe it to myself to feel good!
Noah is basically eating what we are eating now and has two bottles a day, one in the morning and one in the evening. He's doing really well using a sippy cup. I am so grateful that my little guy has such a great appetite, I've heard other parents really struggle getting their baby to eat some foods. It's so hard for me to believe that in another month Noah will no longer be considered a baby, he will be a toddler! Bitter sweet.

Steph: This week was good! I may have screwed up by eating past 9 but I am correcting that by starting my 30 day challenge. 2 nights straight so far... 28 to go!
I am down 1.4 lbs this week which was kind of surprising but it feels good! I actually ate really well this weekend and made healthy decisions! I wanted to eat so much more on Sunday night for dinner but stopped myself because I wanted to try a small bit of cheese cake :) So worth it!
I’m excited for this fresh, new month and hope to be able to buy some new pants by the end of it! I’m a shopaholic and have forced myself to NOT go shopping for clothes until I either absolutely need something or drop a size or 2 :). I just have a jam packed closet so it makes no sense! I do want some coral or bright coloured skinny jeans/pants though :). Hopefully when spring weather comes I’ll be able to wear them.

Chan: Another week has gone by and this one I'm very excited about! I'm down a pound finally which is nice. Staying the same isn't bad but seeing a drop is always better! I really don't know how I ended up down, Jimmy's parents were in town from Saturday until today so we were eating big meals with them. I tried my best to remember the rules and stay away from having a ton of junk food. I had a few slip ups but the loss feels good. Hopefully this week I can really get to work and on track and I'll shed more than just one next week!

30 Day Challenge!

I failed at being good over the weekend. I went over points and ate late at night. NO GOOD!!

Today I am going to start a 30 day challenge! This is something I will not give up on and I know it will break my bad habit of eating late at night. I started doing these challenges last year when a coworker told me that if you do something for 30 days straight it will become a habit. It worked for me before and I need to create this new habit!

Starting today I will not be eating past 9pm unless it is a 0 pt food (Fruit or Veggies). I will keep you updated on my journey weekly :)


Zucchini Snack Time!

I’ve been on the hunt for new ways to make me excited about food lately and I absolutely LOVE my latest snack invention! I love to put zucchini in stir fries and mix it with the other veggies I cook for dinner, but recently I thought to myself “I bet I can make zucchini a snack all on it’s own!” so I went to the kitchen and go to work! I call them zucchini medallions and here’s the recipe:

1 small zucchini
2 tablespoons of low fat parmesan cheese
1 teaspoon montreal steak spice
Olive oil cooking spray

Cut your zucchini into medallions, if you like them well done cut them thinly. If you’re like me and like to have a little bit of crunch still to them then cut them a bit thicker. Spray a cookie sheet with just a little bit of olive oil spray, and place the zucchini on the sheet. Then lightly sprinkle them with just a little bit of the steak spice and then the parmesan cheese. Bake them in the oven for about 5-10 minutes (depending on how cooked you like them to be) at 425 degrees. When they’re done, let them cool a little bit and enjoy!

I know this seems like a very off the wall snack but it’s SUPER low in points and it’s delicious when you’re craving something salty :)
