Power Food: Cabbage


This week is my week to choose a power food, cabbage was my choice because when I was searching online for different homemade soups I came across this cabbage soup recipe and it’s 0 ww points! I also really like the taste of cooked cabbage.

Ingredients:
3 cups non fat beef broth
2 garlic cloves, minced
1 tablespoon tomato paste
2 cups chopped cabbage
1/2 yellow onion
1/2 cup chopped carrot
1/2 cup green beans
1/2 cup chopped celery
1/2 cup chopped zucchini
1/2 teaspoon basil
1/2 teaspoon oregano
salt & pepper to taste
Directions:
1. Spray pot with a nonfat cooking spray.
2. Saute the onion, celery, carrots and garlic for about 5 minutes.
3. Add broth, tomato paste, cabbage, green beans, oregano, basil, salt and pepper to taste.
4. Let simmer for about 10 minutes, or until vegetables are tender.
5. Enjoy
This recipe can be easily customized, adding potatoes, other vegetables, spices or ingredients. Just always remember to account for points when adding other ingredients that are not zero points.

Did you know that cabbage has more vitamin c than oranges? I was shocked to learn this interesting fact! Cabbage is also very rich in fiber, helping to increase regularity. This veggie is also really great at detoxifying. Overall just a great thing to add to your diet if you’re not already.

I was never a big fan of cabbage growing up. I’d actually usually eat it raw and enjoyed that! Otherwise I’d eat it in coleslaws or in salads. My ota used to make sauerkraut back in the day which brings back good memories :).
It’s not something I have ever cooked with but my mom used sometimes in casseroles, soups, and cabbage rolls. One dish I actually dreaded growing up (sorry mom) is one dish I actually love today! My mom’s cabbage casserole. It is sooooo good!! It’s also filling, healthy and can go a long way. I like to have a side of sour cream (mmmm) to dip it in but you can eat it plain or also add ketchup. Hot sauce would be good too.. I’m getting all of these ideas!!! hahah
Anyways here is the recipe and let me tell you.. it is EASY.. and low in points! 4 pointsplus+ per serving! Yum!
Cabbage Casserole
1/2 head of cabbage, chopped
1 lb lean (or extra lean) ground beef
1 tin cream of mushroom soup
1 tin tomato soup
1 tin water
3/4 cup rice
Salt to flavour

1. Preheat oven to 350F
2. Brown ground beef and drain fat
3. Add soups, water and rice. Flavour with salt (you want this to be creamy)
4. Put chopped cabbage into a roasting pan and spread it out evenly
5. Place the meat mixture on top and bake for 1.5 hours
6. Enjoy!
