Zucchini Snack Time!

I’ve been on the hunt for new ways to make me excited about food lately and I absolutely LOVE my latest snack invention! I love to put zucchini in stir fries and mix it with the other veggies I cook for dinner, but recently I thought to myself “I bet I can make zucchini a snack all on it’s own!” so I went to the kitchen and go to work! I call them zucchini medallions and here’s the recipe:

1 small zucchini
2 tablespoons of low fat parmesan cheese
1 teaspoon montreal steak spice
Olive oil cooking spray

Cut your zucchini into medallions, if you like them well done cut them thinly. If you’re like me and like to have a little bit of crunch still to them then cut them a bit thicker. Spray a cookie sheet with just a little bit of olive oil spray, and place the zucchini on the sheet. Then lightly sprinkle them with just a little bit of the steak spice and then the parmesan cheese. Bake them in the oven for about 5-10 minutes (depending on how cooked you like them to be) at 425 degrees. When they’re done, let them cool a little bit and enjoy!

I know this seems like a very off the wall snack but it’s SUPER low in points and it’s delicious when you’re craving something salty :)
